Hi any low range Seiko will be ok 7009 7005 etc ther is plenty of documentation on then. Likewise the Russian watches. Slava. Racketa etc. try and get a working watch then when you have finished working on it if it doesn’t work you know that it’s your fault and more practice to fixit., attached a little document for you TZIllustratedGlossary.pdf -

If you don’t want to buy a back removing tool there is always the glue trick.. superglue a large nut on the back when it sets use a Spanner /wrench to unscrew when the battery is in and the watch is working fill the nut with acetone ( nail varnish remover) , this will dissolve the glue, then clean up any residue. Job done. Use it regular and no scratches or marks. -
Welcome to the forum. My advice would be to start with something cheap and simple that has parts and service information readily available, unlike the Seiko Crown.
