Don't remove that hand. That is the alarm hand, it is fixed to the alarm wheel behind the dial. The movement should come away by ether pins or screws or both. Depending on your skills that h/spring can be sorted.

Crown and stem by the look of it. Depending on how long it has been missing and where it has been stored there could be moisture damage to the watch. Also the question begs as to why it is missing, did something break inside the watch that let it fall out? Cousins sells Omega parts, but as the watch is quite old they may not have the correct crown. https://www.cousinsuk.com/category/filter/omega-case-parts You need to work out the movement caliber and case number to order the correct part. If you have not worked on watches before I would suggest taking it to a professional as the watch will likely need a service too and Omega parts are not cheap.

I had to take it apart down to the keyless works. The setting lever was out of place. I’ll put it all back tomorrow. When setting the Valjoux 7750 if I remember correctly the hammers need to be pressed in when setting. This is achieved by using a designated chronology movement holder. Here is this subject covered in 2015. Part of this post The other movement holder allows you to operate the chronograph as you would when the movement is cased. When pressing on the chrono hands, first run the chronograph, stop it, then zero it, but when you zero it keep pressure on the button and this will keep the hammers pressed hard into the hearts. Now fit the hands and the hearts can't move.

The second hand is lose and move by inertia when stopped istanteously . Be aware, it's easy to crush the tube if you don't put a pin in it while tightening. BTW, we have a section were members like to introduce themselves before asking questions.

No, the oil will stay on the side of the oiler until you touch the pivot. If the oil is dripping off the oiler, that's way too much. Here's a couple of YouTube videos from OSUIT that I found very helpful.
