Do I need to re-oil if I reassemble several times?

Train jewels and all pivots must be perfectly clean before any lubrication is applied. Also, oil should stay in certain place, filling the gap between the pivot and the jewel. So i would say that you need to clean, dry and oil every jewel on the bridge again. It takes only a minute to clean them as you do not need "full car wash" - just a quick dip, brash and dry it quickly.

I'm a beginner and had trouble with a 11DP.  I had to take it apart again a few times.

think about this as a learning opportunity a opportunity to get better at doing things like lubrication. Once the watch is all perfect clean it again and practice lubrication again. The more times you practice this the better you'll get.
