What do you guys use to brush satin on cases?

Unfortunately that looks like a really deep ding. It l might look odd if you completely rub back to eliminate. If it was me i would rub gently with a 2000 grit emery only rubbing in the same direction of the grain already present until it looks reasonable then STOP. You can take off but you can't add.  

PS I have the same watch and I love it .

It looks like a Fibreglass scratch brush to me,  if so it might be a bit harsh as hey are used to remove heavy staining.  If you are not sure I would leave it alone. As you say if it starts to look different you will have to do the whole watch case & then will it look right for a Rolex.

As clockboy says, it’s a deep ding. I’d just leave it as you can’t simply brush over it as it has raised the material surrounding the indent. 
 

The brushing is coarser than you might expect. Probably somewhere in the 400 grit region.
