So I have an old cheap bull's eye dollar watch that I want to practice on. It seems to start running when I have the crown pulled out with a little counter clockwise tension, but stops soon after letting go. would love to understand what could be going on for learning purposes.

It's normal that an old watches do that or simila symptoms when they are dirty inside, and/or oils have drie or congealed, in other words it's gummed up.

The repair is called servicing,  that is taking them apart, clean everything, inspect all parts for wear or faults,, apply correct lubrication,  reassemble and veryfy every function as you go, final check over a couple of days, and time regulation,

Possible broken mainspring.

You are supplying power through the minute train when you get it to run as you say you do.
