Removing stem from watch - Caliber FHF 175

Hi I broke my watch stem for my watch (FHF 175). I was looking for some advice on removing the broken end and replacing it with a new one. I recall when I was fiddling around a year ago that I had accidently removed my crown+stem and then popped it back in again. I suppose though its not that straight forward (I.e. need to take some precautions). I recall loosening a tiny screw (see screen shot) and it came out. Cant remember though if I also removed the gears and plate as well before losing the screw (Although I guess I would have had to remove that screw in the screen shot to actually remove the plate under it).  I want to be a bit careful here. Can someone confirm if that was the way to do it and what precautions I should take pulling out the broken end of the stem and sticking a new one back in. I'm not dealing with a rolex here so hopefully I'm not looking to be scared off of doing this myself but use some useful advice. Hi thats the right screw , loosen it 1 1/2  to2 turns and then with either a pair of tweezers or snall pliers the sten portion should pull out. Undoing the sctrew too far the setting piece will fall out so be careful
