I've got an Illinois pocket watch and the needle seems to go through a pin mounted to a wheel but I really don't know how to rotate that wheel to adjust the time. I bet this is pretty simple but I'm kind of new so it is better to task than experiment, right? Is there a screw somewhere?

Screw is bottom left in the center of that brass bush. If you look closely, you can see that it drives a gear that gives you more control over the rate of adjustment. The fork/stud holding the cock may be less than free, so be careful. It may need a bit more disassembly to be useful.

What would be something good to help loosen up this screw. I'm suspicious that it will be very hard to turn.

Give it a try. If it turns, you're golden. If not, you'll probably want to remove the other two screws and I imagine that plate will lift off around the screw with the gear, which will then likely be able to be pulled straight out, cleaned, lubed, and reassembled.

Got a set of tiny screwdrivers today and the third smallest was just the right size to turn this screw. Just to be safe I turned it counter-clockwise to see if it would move and it did but that made the watch faster so I turned it in the clockwise direction to move the watch back to just a little slower than it was.

I did a thing! Yay!

Thanks for the confidence boost.

Well done. What does the first word say around the micro adjustment assembly please ? Might still be worth a disassembly clean and lubrication of the bearings of the two gears at some point when you feel confident.

It looks like a name  "Chalmers" Pat 12.19.82

I found this link to the patent information:
