A have this waltham 18s 7 jewel 1857 but I'm not sure if it is a hunting or a openface does anyone knows also where the stem goes attach pictures are here.

From the looks of your pictures it doesn't have a stem. You look at the canon pinion You'll see a square on the end so that's probably a key set watch. If it's a key set watch more than likely it's probably a key winding watches you don't have any of the associated parts that would normally be with Or for stem to engage with.

Since there's no stem, it can be either, it depends on the case and dial. I don't think they changed the movement with keywinds for open face/hunter, just adapted dial and case to suit.
