Setting the beat

I don't believe so (but I'm a novice).  My method is to remove the pallet bridge and pallet before replacing the balance, that way you can see exactly how far out of alignment the roller jewel is in relation to the banking pins- just don't forget to let down the mainspring if you use this method though!  With this method you can see which side the jewel is favoring and turn the collet accordingly.

You could also try leaving the palets in and letting off the power on the mainspring. When the balance is at rest the roller Jewel should be in the centre of the pallet fork and the pallets should be in the centre of the banking pins, if the balance is at rest and the pallets are touching the banking pins on one side then you can work out which direction the roller needs to be moved round to get it in the centre, I would nomally move the hairspring by turning the collet, if you are careful you can often get a small screwdriver in the slit in the collet and turn it slightly that way.
