Snapback / bezel knives

Fine blades for case back removal are very useful, I keep a couple of Stanley modeling/craft knives in the bench, tips purposefully snapped off and the sharpest of the edge dulled on a cumi block, surprisingly strong steel for the purpose. The offbrand ones tend to snap very quickly.

Wouldn't it be too sharp to use on a watch?

What happens is that on some cases nothing else can be initially inserted. Safety is an issue, and after making a little space  for another tool the sharp blade should be put away. In fact I've posted these knives just because they look good and high quality, not because I recommend their use.
