Somebody could tell me or sbed me a video to know how to remove the stem on nh05

If you mean nh35, there is a small lever close to the stem, if you pull the stem out to the setting position you will see it disappear. This is towards the two o’clock from the stem. The stem can only be removed from the fully in/winding position.

this has a setting lever axle that has to be loosened for the setting lever to have enough play to allow stem removal. Similar to the ETA 6497,
